    I haven't seen a recipe thread on here for a lonnnnggg time. So lets share your favorite recipes, or easy meal ideas! Here is mine:

    In the A.M. put several (like 8 or so) thawed chickem breast in a large crock pot.

    Add as much garlic as you can stand, and then a little more

    Add 4-5 cans coconut milk.

    Add a massive amount of curry powder. It depends on how much you like curry. I put in 5-6 tblsp.

    Turn on high and leave on all day.

    In the P.M, the chicken has shredded, and absaorbed the curry/coconut mixture. I serve it straight form the crockpot over rice, spinach, peanuts, cilantro and a peanut sauce. It is also good with a little black beab/garlic sauce on top.

    I have alot more, but this one is sooo easy!!

    Jalapeno Potato Salad

    We make this for the first time this summer and fell in love with it.

    5 pounds of red potatoes

    2 to however many you like chopped fresh jalapeno peppers (you should probably remove the seeds)

    about 4 sprigs of chopped cilantro

    3/4 of a cup of mayo

    3/4 of a cup of sour cream

    Salt and freshly ground pepper

    You can also add chopped black olives, hard boiled eggs and red onion if you like

    It is best to mix all the ingredients together in a separate bowl first before adding to the potatoes

    We eat a lot of pasta here, so I put a little olive oil in a pan. Add a large onion, sliced real thin, as much garlic as you like. Saute real slow, until becomes translucent and sweet...add plum tomatoes and simmer until the tomatoes are soft and mushy...add Italian seasoning, salt and pepper, a pinch of sugar to combat the acidity of the tomatoes. Let simmer for an hour, stir occasionally, and at the end of cooking add a little more olive oil, stir to mix. Boil your pasta,any kind you prefer, and drain, add the tomato mixture to pasta, stir in lots of parmesan cheese, serve with ceasar salad and fresh Italian loaf. Don't forget the vino. Red.

    Ok Well I make this for my husband and he really loves it:

    You need:

    About 3-4 frozen chicken breasts, slightly thawed; cut in thin strips and then halved. (makes for easier eating,)

    1/2 cup to 1 cup flour

    Large pkg of white mushrooms

    Olive oil (2 tbs or so)

    3-4 cloves garlic

    1 medium sweet onion

    Fresh Basil about 1 cup (or to taste if you really like basil you can add more)

    1 cup (or so ) white wine, I use a chardonnay

    salt/pepper to taste

    While you let the cut up chicken finish thawing in a bowl. slice up the mushrooms if they aren't already sliced. Crush garlic or mince. Slice onion. Bruise and chop basil. In a skillet (I use a cast iron that is well seasoned so it's become pretty non stick) slowy heat oil, Keep it at a fairly low heat, ya don't wanna burn the garlic or onion. Add garlic, onion and let it slowly cook. When it's just about softened add the basil and shrooms. Cover, cook low heat.

    Now get the chicken dry it off and lightly coat with flour. When shrooms and basil have cooked down a bit remove from pan and keep warm on a plate. Add the chicken, brown both sides. You might need to add a little oil. When the chicken has browned add the basil and shrooms and wine. And cook til chicken is tender and cooked through.

    Season with salt and pepper. I serve this with angel hair pasta for me or for my husband I'll make up some rotini pasta.

    Oh yeah, save the wine and finish with dinner
