I've just finished cooking our Christmas cake!!

    I've just finished making our christmas cake!

    It took nearly five hours to cook but it's a beauty.

    It contained nearly 4 lb of mixed fruits

    12 eggs

    1 1/2 lb flour, sugar and butter

    spices, orange and lemon peel and 1/2 pint of brandy.

    After it was cooked I cooled it and poured on 1/3 bottle of best brandy.

    It's about to be wrapped securly and hidden away until December 23rd, when I will thickly marzipan it and stick on my christmas 'peoples'!

    We don't bother. Tesco's do a nice selection

    Hi Dansk!

    I can understand your not wanting to bother BUT, Tesco's contain hydrogenated vegetable fats. Avoid everything with hydrogenates. They are suspected as a cause of lymphomas.

    Your cake sounds wonderful Gill. My sister makes them almost every year. I think I should check to make sure is is going to do it this year. As far as getting lymphomas from eating bad things at Christmastime I don't think you will do yourself much harm other that gaining weight if that is about the only time you eat junk food. However I never heard the connection to lymphoma metioned before and it is something I definately need to look into for personal reasons. We use mostly olive and canola oil when we cook but who knows what you get when you eat out.

    Anyway I'm glad your Christmas baking. Witnesses really miss out on a lot of fun.

    Oh my god - not the dreaded FRUIT CAKE! Gill, they actually have contests here about passing on unwanted fruit cakes to other unsuspecting folks (received as gifts from the totally clueless - or the totally evil) and people who have the oldest fruit cakes ("seasoned", ahem) sometimes win money - usually from sponsored radio contests. Every year around xmas time there are fruit cake horror stories on my local "all news, all the time" radio station. LOL! I'll bet if you do a google search under "fruit cake horror stories" or something similar, you'll get an eye full! And you spend so much time making one too. Oh my! Don't you have a good plum pudding recipe ala the kind they showed on the 1974 remake (movie) of "A Christmas Carol"?

    I love fruitcakes ! A friend gave me a home-made one last year, and it was really good, lots of brandy....
