Help . . . any cooks out there?

    I have think chicken breasts, mushrooms, seasonings, water crests . . .

    Anyone have any ideas or recipes? I can't find anything in my one cookbook.

    Stir fry? First do the chicken set aside, add any other veggies you have on hand (froz broccoli, green beans, corn, carrots), try to get the veggies a fairly uniform size for cooking, when they are getting near to done, add sliced mushrooms(sooner or earlier, to taste), then add chicken and water chestnuts (my fave) Meanwhile, while meat/veggies are being cooked, mix together some water and cornstarch, some soy sauce and any other asian stuff that makes it good for you (a little sesame oil, anchovy paste, oyster sauce-whatever you have) and add it when you add the meat and water chestnuts. Stir in till its good and hot.Just a couple minutes, then simmer(covered on low!!) until the rest is ready-if you have rice, start it before the rest. It will really only take a few minutes to do the stir fry. YUM

    maybe brown the chicken breasts gently, remove from pan. Put washed, sliced mushrooms and some diced onion in the same pan, saute in a little oil until tender. Sprinkle with a little flour, stir until well mixed, add a couple of cups of chicken broth, and the chicken breasts and whatever seasoning you want - salt, pepper are probably enough. cover and cook until chicken breasts are done, and broth is a little thickened. Remove chicken breasts to plates, add some sour cream or maybe a 1/4 cup of whipping cream to the mushroom gravy, stir and heat through, serve over chicken with noodles and peas.

    make a vinaigrette and toss the water cress with the vinaigrette and serve beside the chicken.

    you can add some wine when you add the chicken broth

    Does it have to be a Bible recipe? Just kidding but it is under Bible research.

    I've been told I'm a good cook. I love new recipes, that's for sure. I made a chicken dish a couple weeks ago that was a Big Hit. I'll have to look up the exact directions and get back to you. But it is chicken breasts sliced thin and then pounded between plastic until very thin. Make Duxelles = Chop mushrooms very fine and saute in a bit of olive oil until all the juice is reduced. Spread a little goat cheese on the chicken breast then a Tbs of the mushrooms. Roll up and tie with string, saute in olive oil.

    It sounds a bit complicated but not really. There is a sauce with white wine and the pan drippings to top it. I made garlic mashed potatoes and fresh tomatoes salad to go along.

    Really REALLY good......um....if you like goat cheese.

    Can I get back to you tomorrow morning? Sorry, it's getting late and I have to watch TV, guess what Top Chef.

    I think I kind of took a little bit of all your advice. Thanks . . . It is still missing something though.

    I slightly breaded the chicken with flour and cayenne pepper, probably not enough pepper b/c it didn't come out spicy at all.

    I took the chicken out, added chicken broth, mushrooms, water crest, green onions to the pan. Cooked that up a little put the chicken back and let it cook a little more.

    It was still missing something so I added a little regular pepper. That made it a little better.


    Then I thought maybe a hint of sweetness so I added a little bit of brown sugar to the sause. Still not right, so I added a little bit of lemon flavored soy sauce.

    It's okay but still not quite right. I never claimed to be a Chef

    Maybe putting wine in the sauce would have made a big difference. My fiance is gone and I couldn't get the damn wine bottle open. It's so hot in my house so I gave up on the wine.

    JWDaughter, I started the white rice as soon as I got home from work. ;)

    In future, it is fun to put the ingredients you have into Google, say 'chicken and mushrooms,' and get recipes that use what you have on hand. If you have a general idea what you want it helps. Like maybe 'Asian' style or French or Italian...you will get lots of results and you can pick what fits your taste and what other ingredients you have on hand.

    With the internet, I find I don't really need to use cookbooks anymore.

    For future reference, the BBC website has a good recipe search feature, you can search on several ingredients or the recipe title.
