"Soul for soul" + "The soul is in the blood" = avoid blood shed in death; the blood of slain animals.
If you slaughter an animal, that soul won't be set on your account because it is in the blood spilled on the ground. As long as you don't eat the shed blood, you're free from bloodguilt. However, adds Genesis, the blood of slain humans is always asked back.
This symbolism would remind you to respect life, and not be bloodthirty.
That was the idea behind that blood prohibition, but I don't know why few people understand it. Perhaps it's a cultural difference. To ancient people, "blood" = the blood shed in death, like in the expression "I am free from the blood of all men". To us, "blood" is the physiological fluid.

Can't eat the blood of a human, so is it ok to eat one?
Never read anywhere that the bible says its wrong to eat human flesh...
Just another example of how bonkers the whole blood thing is.
