The problem I'm having is that it's mostly theory, and I don't want to repeat something we covered in class already.

Why dont you make a presentation of a lab/troubleshooting scenario?

I guess you haven't done a practical yet. I have two 2600 series routers on my desk here ready to be conf'ed. Wish I could lend you one. ;-)
Ideas:
#1 Do a brief presentation of routing protocols and how they are used to ensure redundant pathways on the net.
#2 Out line the development of Cisco's EIGRP.
#3 Explain the relative advantages disadvantages of OSPF, RIP, IFRO, EIGRP, and BGP.
#4 Explain how VLAN's can be used to secure sensitive data on a corporate LAN.
#5 Describe the OSI layer and how it can be used to aid in troubleshooting network connectivity.
Any one of those would easily eat up 5 minutes.

Explain the development of ARPANET and the subsequent creation of the Internet along with it's effect on the development of the TCP/IP protocol.
