The watchtower of May 15, page 29 has the article "how the governing body is organized". Does anyone know approximate numbers of how many individuals besides "anointed governing body members" sit on these "committees"?

I don't know the number. The committees are all listed in this article: http://en.wikipedia.org/wiki/Governing_Body_of_Jehovah%27s_Witnesses

The article talked about their non-anointed assistants:

A number of non-members of the Governing Body, serve on some of these committees as assistants, such as in secretarial positions. They can be from the 'great crowd' (meaning they are not of those with a heavenly hope), and their work is sometimes compared with that of the Nethinim in ancient Israel.

thanks for responding gopher, and the question then is why not annointed for all positions? Probably to darn old, unless some of the newer, younger anointed were used, but oh ya, they are not legitimately feeling gods spirit telling them they have that calling, like the anointed in the past, so they are not really anointed at all. And this is why the number of partakers won't go down.

The WTS recently dropped their teaching that the calling for anointed ones stopped in 1935. (There was a Question from Readers or something like that recently.)

So that seems to be a transition allowing more younger ones to claim an anointing. All of the newer Governing Body members were born after 1935, which makes sense since we're in the 21st century now.
