Red Pepper Goulash
This is a long standing family favorite. We have been to Germany many times and this is the closest I've come to what we had there.
3 pounds good quality roast beef into 1 inch cubes fat removed.
2 T. Olive Oil
2 Large Onions chopped
3 cloves garlic finely chopped or minced.
3 sweet red peppers diced
2 T. Paprika
1 1/2 teaspoons salt
2 teaspoons caraway seeds
1/2 teaspoon pepper
1/2 teaspoon marjoram
1 can fire roasted diced tomatoes 14.5oz
2 cans Beef Broth
1 6oz can tomato paste
1 cup sour cream
eggnoodles
Brown meat evenly in oil, and remove from pan. In drippings saute onion, peppers, and garlic until soft. Add the browned meat back in and coat with all the seasonings, stir in all other ingrediants except the sour cream. Simmer, covered for 2 hours, then with a large fork break up meat into finely shredded pieces....it should be very tender at this point.
Prepare noodles. Turn off heat on the stew and stir in the 1 cup sour cream.
Serve goulash over eggnoodles with a large dollop of extra sourcream on each serving.
