Is it true they ask about your sexual tendencies before entering Gilead school?

Not for Gilead. The application (long form) that is mailed to you has over 125 questions. I don't recall any questions about sex at all, as only married couples can apply to Gilead, and I guess they assume you are only having sex with your wife. (lucky them....)
HOWEVER, the Bethel app does ask if you have ever been accused of pedophilia and if you ever had a homosexual relationship.

You may be confusing tis with the Bethel application- Which does ask this question.
Not that any of those boys are honest with themselves.
I never understood the appeal for a 20 year old guy to want to spend years confined with other guys. -

I do remember that they ask about your race. But since they do not ask you if you are not married its most likely the Bethelform. or it must have been a very long time ago.
