Bread baking

    So, we were snowed in and I get a little hermitty in the winter anyway. I dragged out my bread machine and my cookbooks and I have been going crazy baking bread. And scones, and cheesesticks etc.

    Best one so far is brioche, which is amazingly gorgeously wonderful-Wonderful crumb, sweet(not too much) crusty shiny tops. YUM. Oh, and the scones made with butter and cream are MUCH better than my normal cheapie ones made with margarine and 1% milk. The interior so tender and creamy tasting.

    My husband is enjoying the loaves of banana bread. I prefer pumpkin applesauce.

    I made a biga for Italian breads, and am going to do some sourdoughs--which are amazing(I've done them before!!).

    Today is homemade pizza. I am sticking to storebought sauce, but other than that, all homemade.

    Anyone have a wonderful grain or flour or recipe I should be trying? I finally broke out of the basic mode so now I am willing to try anything I can afford:)

    I'm scared of you, girl.

    I don't have any recipes to share, but I advise you to stick with whole grains.

    They are supposed to be so much better for you.

    Hears a good one you will enjoy with pasta. Italian herb focacci bread. 3 1/4 flour,1 env.yeast,1 tablespoon sugar, 1 tps salt, 1/4 cup ext. vergin olive oil, 1-2/3 warm water 120f, 2 tablespoons shredded parmesan cheese, 1 teaspoone Italian seasoning. Mix yeast, sugar and salt in a bowl add 2 tablespoons olive oil and water mix well spread doe in a 13x9 pan greased. Cover let rise for 30 min. Sprinkle olive over dough,parm cheese and seasing. bake for app 30 min till brown. Great with Italian food, enjoy

    Wow, never used a bread machine. Always done it the old fashioned way.

    Fresh baked bread is the best!

    I have a bread machine too, always turns out great. I just use the basic white recipe or the pizza dough recipe. I love warm bread dipped in olive oil that has a little basil and garlic in it. It's just the best. My bread maker came with a pretty good raisin bread recipe, I'm sure yours did too.

    I am wanting to give bread baking a try. I now have all of the ingredients just need to do it, probably next week.

    I have done banana bread (I lost the recipe someone here gave me... it was the best) but I have not yet tried to make a yeast bread from scratch.

    One thing I found out is that if you want whole wheat bread that is not crumbly but more more like store texture, you need dough conditioners. You can buy it premade, or the individual components, but you might have to go to a health food store or specialty store. Since you are using a bread machine, those mixes generally have all the dry ingredients.

    I do not have a bread machine.... but I need to beat up some dough before I go looking for a person to beat up...I need stress relief..lol

    I have a bread machine. Mostly I make whole wheat or cinnamon raisin bread.

    I baked some bread in the oven once, but the plastic around it melted, it wasn't very good.

    Snakes, you can use a food processor or a standing mixer with a dough hook to do the kneading for you, then just let it rise and bake it. I have a bread maker, but I have seen them very cheap, just a few bucks ( still in box) at garage sales and thrift stores. You don't have to use a special mix for the machine, just dump the ingredients in there. I love those new silicone baking pans if you don't use the bread maker.
