Killer Egg Nog for diabetics

    My wife was recently diagnosed with Type 2 diabetes and was missing her usual traditional Egg Nog.

    The market had low sugar Egg Nog but it still had way too much sugar for her, so we decided to make our own from scratch using splenda.

    The results? Utterly traditionally fantastic!

    The recipe? Very simple.

    Go to the Web for a recipe you like, and of course sub splenda for sugar. Second, she's allowed to have fat so we substituted half-n-half for the milk making it more creamy.

    Finally she can have Rum or Brandy to mix with it, although it was quite good without any Santa juice. For me, Rum was a necessity making it perfect.

    Yes its true, Diabetics do not have to suffer at Xmas time.

    Any holiday diabetic recipes you care to share? Please do, we will appreciate it greatly.

    In the mean time, try some traditional homemade Egg Nog.

    I'm diabetic too and I'll give this a shot. I have to watch the fat though. I normally prefer my eggnog alcohol free. I'll have my scotch straight up.

    My wifes diet is extremely low carb, monitored by a doctor. Is working great for her as she can have lots of fat. (eggs, cream, cheese)

    But mixing scotch and Egg Nog? Sounds good to me, as long as it is a cheap one.

    I don't know what my diet will be like in the near future. My blood glucose has been out of control lately, sometimes going up to 23.1 mmol/l (415.8 mg/dl). Doc just doubled my medication and it's only improved a little. I see her again on the 23rd, just in time to spoil my Christmas. I'll have to try the eggnog before then.

    I love eggnog but the ones I like have way too much fat and sugar. If you get a chance could you post the recipe of the one you like dissed?

    This is the recipe we used. We cut the measurements in half. Sub splenda for sugar, Brandy for Rum.

    But there are many recipes on this site that may work better for you and your dietary restrictions.

    For more portion, I used a spiced Rum, my wife used Brandy.

    Great idea!

    I'm not diabetic but I do like the idea of reduced sugar.
