So if the practice of smoking is older than the Bible, WHY wasn't it listed as a sin in the Bible since Jehovah's Witnesses consider it a sin? Surely it was popular to do back then right?

Good point. The Watchtower say that it wasn't mentioned in the bible because people didn't start to abuse it until the Americas were discovered. Another piece of Watchtower spin, to justify their stance that the bible is infallible.
It wasn't mentioned in the Bible because at the time no one in the Middle East, Asia, Africe, or Europe had any idea there was such a thing as tobacco.

The Wikipedia entry mentions Tobacco use in the Americas dating back thousands of years.
The comment still stands - the Bible writers didn't mention it because they didn't know about it.
The Bible doesn't mention cocaine, corn, pumpkins, or bison either, all of which were in existence then - in the Americas.
