By experimenting you can make this as hot or mild as you like it!
Fresh Tomato Salsa
3-4 Tomatoes, fresh, medium sized, stems removed, finely diced
1/2 Onion, white or yellow, finely diced (rinse & drain after cutting to avoid bitterness)
1 Poblano (pasilla) chili pepper finely diced - roast for additional flavor
2 Cloves of garlic, crushed
1 Serrano or jalapeño chili pepper (stems, ribs, seeds removed), finely diced
1 Lime, juice of one fresh
1 tbs Apple cider vinegar (adjust to taste)
2 tbs Tequila
1/4 - 1/2 cup Cilantro, chopped
Salt to taste
Optional:
- Dash of Chili powder to taste
- 1/4 - 1/2 habanero chili finely diced
Refrigerate for 1 - 2 hours to blend flavors
Ingredients can also be prepared in a food processor or a blender.
I like to puree everything except the tomatoes and onions. They are good chunky.

I make an killer Texas chili that's hotter than a three-alarm fire.
But I can't share the recipe. If I did, I'd have to kill you. Sorry, that's just the way it is!
I will give you one hint: No beans.
You buy the beer and maybe I'll make it for you some time!
