My boss, the interior designer, is from Cuba. She has recently introduced me to MOJITOS. YUM YUM YUM!!! I must say...this is MY drink. Since it's hot and I've got mint coming out of my garden's little ears, I've recently been staying cool with this recipe.
MOJITO
- 1 glass crushed ice (the little pellet ice from Sonic is the best!)
- 7 or 8 crushed mint leaves (I just crush them into the ice)
- juice from 1 full key lime (sometimes I put in more)
- 1 Tablespoon sugar (I use Splenda to keep carbs down)
- 1 shot pineapple or mango rum (okay, I use more than a shot)
- fill the rest of the glass with club soda
Stir until sugar dissolves. Garnish with a pretty mint leaf or an extra wedge of lime. Play a little Celia Cruz in the background and you'll think you're in Havana itself!
