I have a pen, paper, and a clipboard (it's one of those one's that's kind of like a harcover book and a clipboard inside, hard to explain, but it's thin and easy to carry around). Then at home, I file the notes for the day into a binder.
Whether you want to type notes or write them depends on 1) how large is the desk surface and 2) how long you have to write for. I only bring my laptop to 2-3 hour classes.
If you're taking science courses, keep a scientific calculator for you as they don't allow graphing calculators in most first year courses (an it really pissed me off when I had to do first-year calculus with no calculator at all, but for some reason I could use a scientific one with my cell biology course).

Tsunami, if all you want a laptop for is typing and word processing, get yourself a PDA and a folding keyboard. Each one will fit into a pocket. Then download Wordsmith (wordprocessor, only $40, but doesn't support tables or graphics) from BlueNomad.com.
I bought a Palm Zire 32 on eBay last spring for about 2/3 of its retail price. I use it mostly to write and read. Haven't bought a keyboard yet but will do so as soon as I feel flush.

For your laptop? I'd get Microsoft Office Students and Teachers Edition, which is much cheaper, or you could get a program called OpenOffice for free, which allows you to create .pdf files. Be sure to get a good printer, but look at the prices of ink for the model you're getting and make sure to get cheap ink (you don't want to spend $100 on ink cartridges every few months).
For my wireless connection at university, I use a program, a free one, called the Nortel Connectivity VPN Client. It makes sure your wireless transmission is secure.
You usually don't need any special computer programs, but I figure you'll at least need Excel for business math.

I'm taking online courses from the confort of my own home. Virtual classroom with audio/videoconferencing. I just sit here in my underwear, and I can smoke and drink as much coffee as I want. I can order in pizza too.
