Did you used to be an assembly food rapist?

i confess proudly that i was one of the biggest assembly food rapists when it switched to the donation arrangement.

in fact, i would roll up to the counter with a fake list and pretend i was getting food for a huge family, lol.

"uh, yes, hello sister, what a fine morning program that was, may i please have 6 roast beef sandwhiches, 6 chocolate puddings, 6 apple danishes, 6 sodas....etc" and i would eat throughout the entire fking program, as it was so boring there was nothing else to do.

I guess when I was in, me an the wife were the totally opposite. While we gave generously, as we usually sat with familial relatives, we were appalled that they gave barely enough to cover the costs if at all. . We often saw them counting pennies and change to donate for the food surprising because they had better jobs and were a whole lot better off than us. These same family would often get enough food to eat during their drives home also.

We knew that food by the donation arrangement wouldn't last though as we saw many who would get up before the end of the last talk before lunch to get food, then get so much that if you weren't there for the first few minutes you got nothing. that coupled with the typical cheapskateness of witnesses it ws only a matter of time before the even newer simplified arrangement of bringing your own foos would be born.

these shows and a few others were banned in my parents home when i was a kid.

demunz and the like were the reason given by the wts and thus my folks followed suit with the the rule of the house.

shhhh i watched them anyways.

as some of you know, i started college 5 years ago for the first time at age 27. i had been out of the "truth" for 9 years at that time, but had just broken free of the mentality.

well, on saturday i walked across the stage with the 130th graduating class at rocky mountain college!.

after 5 years of working several jobs, taking care of two little boys as a single mom, and trying to get the most out of my college experience, i earned my master of accountancy, bachelor of science in business management, and minors in writing and organizational leadership.

as a southerner, being married to one of them damn yankees has good points and bad points.

not so good - watching her dad throw chicken on the grill, cover it in store-bought sauce and call it bbq.

its a testament to my upbringing that i let that one slide.

Some of the best BBQ ever can be found in small out of the way roadside holes you described. Those people are doing it because they CARE about their craft.

Unlike these big commercial multistate chain operations. In Texas, stay away from big chains like Pappa's BBQ and Rudy's. That boiled cheap meat they slather with sauce is not real Texas BBQ.

Persimmon.....hmmmmmm....I'll have to try that.

I typically make a liquid concoction of spices ( I won't share that secret) that I spray on the meat to keep it moist and infuse more flavoring while it is cooking. I've also experimented with a host of different Jamaican marinades.

But you're right, lighter fluid is the tool of the devil and should be avoided at all costs in getting the wood to smoke.

Really great BBQ doesn't need BBQ sauce. All that shit is is glorified ketchup.

Spice your meat and let the spices on it marinate in the fridge the day before.

Also, I would soak some applewood and Pecan wood pieces in water overnight, and light it up in the pit until it is smoking. Add more pieces as necessary and don't let tht temperature get above 275. Smoke all meat as needed , turning occasionally until the chicken reaches 160-165. Throw a slab of ribs on the pit for good measure.

When the chicken, ribs, or brisket is at the right temperature, take it off the grill, wrap it in foil, and let it "rest" for at least and hour or an hour and a half before cutting and serving. This will allow all those flavors to permeate all the way though the meat to the bone, lock in all those juices, and keep it from drying out.

As far as lighting up coals and\or wood......

If you have to, use lighter fluid as springly as possible. Use more paper and be patient.....

Standing next to a BBQ pit that looks like the towering inferno may impress your friends, but to a true BBQ enthusiast, you'll look like a world class idiot.

The last thing you want is your food tasting like its been soaked in that shit.
