This canning is relatively new to me.......I have been "at it" for only two years now. It all started after I quit my job and decided to be a full time stay at home mom. I don't know what the initial interest was, but after I got started I was always excited to try new recipes. My family really enjoys it and I have to say the work is very fulfilling to me! Sounds silly, but to grow something from seed, take care of it, weed it, water it, the pick it and process it is a very neat "journey".
I use to can only what was in my garden, but this year I ventured off to a local farm market to get the veggies that I didn't grow. Another great experience was finding a wild raspberry patch and getting up at sunrise to go and pick (what the bears left for me anyway). Something about the sunshine, the birds and the solitude really fed my soul that morning.

Oh Redhorse woman........I LOVE BAKING BREAD TOO! Haven't baked too much this summer......but when Fall rolls around I love the smell of baked bread in a house!
I use to make my kid's own babyfood also when they were little. Whatever we ate, so did they.
As for your hubby, I can't imagine not wanting to eat anything home made!

lyin.....i just love you! Yes, you have envisioned my house pretty close! I told eyegirl that my house is starting to smell like Grandma's (the GOOD smell!).....like when we were kids and would go to her place and smell all her cooking.
My home is my haven......I enjoy spending time in my kitchen. I told Filthy that I would love to have a bed and breakfast if only we had a big ole' house!

Celia.......here is what my "bible" says about selecting the cucs:
"Only use the short, picling varieties of cucs for making pickles and relishes. Pickling cucs will make crisper, crunchier pickes than the common table varieties of slicing cucs. Long, slicing cucs contain too much water and have seeds that are too large to make good pickles. Pickling cucs have small seeds, contain less water and may be harvested at any size, depending on the type of pickle to be canned. "
To anyone who canns, I strongly recommend this book "Blue Ribbon Preserves" by Linda Amendt.
I used smaller pickling cucs for my pickles.......they were soaked in salt water for 24 hours, then soaked in the brine for another 24 hours, then cold packed in hot jars w/hot brine. Processed for only 3 minutes in a boiling bath so that they stay crunchy. You should have heard all the lids popping in here! LOL....music to my ears!
I have a great recipe for dilly beans if you want, celia. As for tomatoes, I make spaghetti sauce. I also can crushed tomatoes to use. Salsa is always good too!

Why yes, Rob.......there are Kosher Dills (HUGE thanks to Travis for the red peppers that worked so well), Regular Ole' Dill and the most of the small jars are Bread and Butter pickles.
Canning to me is a lost art......not many people do it anymore-but I enjoy it!
So far this year, the pantry is full of:
- peaches
- strawberry jam
- raspberry jelly
- blueberry jam
- blueberry jelly
- sweet corn
- beets
- pickles
- candied carrots
I haven't even begun to touch my garden yet!

Hello, I'm new here

Let's see.........in the morning I grab a cup of coffee and check the board. Rarely do I post then.
I check it periodically during the day and post here and there.....I don't think I have posted more than 3 times in a given day.
In the evenings I check the board again and TRY to get into the chat room.
Lately......well lately, things have changed. I started getting myself worked up about stuff on the board and knew that I needed to take a break. I decided that my energies could be spent elsewhere....so I have just kinda kept quiet. Poor eyegirl., she comes over and what I didn't type I tell her!
