This is out of my Mrs. Field's Best Ever Cookie book:
Double-Rich Chocolat Cookies
2-1/2 Cups All purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 C. unsweetened cocoa powder
1 C. (packed) dark brown sugar
3/4 C. granulated sugar
2 sticks (1 C) salted, butter softened
3 large eggs
2 tsp. vanilla extract
12 oz semi sweet chocolate chips (~2 C)
Yield: about 4 dozen
Preheat oven to 350.
In a medium bowl, combine flour, soda, salt and cocoa powder. Mix well w/a wire wisk and set aside.
In a large bowl, blend sugars w/an electric mixer at medium speed. Add butter and beat to for a grainy paste. Scrape down sides of bowl, then add eggs and vanilla. Beat at medium speed until light and fluffy.
Add the flour mixture and chocolte chips, and blend at low speed just until combined. Do not overmix
Drop dough by rounded tablespoons onto ungreased cookie sheets, 1-1/2 inches apart. Bake for 18-22 minutes. Immediately transfer cookies w/spatula to cool, flat surface.
