I haven't had access to deer meat for awhile and I'm hoping to find another source. I'm hoping one of you might like to go deer hunting, or might know someone who does.

marinating it in wine vinegar with an apple, or red wine, gets rid of the gamey flavor and makes it tender and sweet.

I'll have to look into that. Sadly in the US one cannot sell deer meat... but if you know someone with it they can give it to you.

Here's what I've found so far... It appears that it is legal to import. The hunter who is shipping the meat into the US just needs to fill out this form.
