The only time I use raw garlic is when I'm making my homemade Caesar Salad Dressing. I love roasted garlic. You cut the ends off the bulb, put it face up in a clay pot, drizzle some extra virgin olive oil over it, sprinkle some parsley on top, cover it and roast it either in the oven or on the BBQ for about an hour......when it's done, you squeeze it out, mash it up (add a bit more olive oil), dip small pieces of grain bread into it and have a glass of red vino.....Mmmmmmmm.......delicious!!
