Ok this is for those that requested this recipe. Its guaranteed not to disappoint:
Preheat oven to 400
Ingredients:
- Pie crust (either your own, or a frozen deep dish Pilsbury Doughboy one)
- 1 17 oz can of sweet potatoes (drained and mashed)
- 1/2 cup of sugar
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp ground nutmeg
- pinch of salt
- 3 slightly beaten eggs
- 1 cup of sour cream or 1 cup buttermilk (I like sour cream for this one)
- Whipped topping (optional)
- Mash up sweet potatoes in a large bowl
- Add in sugar, cinnamon, allspice, nutmeg and salt into potatoes. Add eggs. Beat lightly with rotary beater
- Add sour cream SLOWLY!!!! This is key
- Pour filling into crust and bake for about 25 minutes with foil on crust
- Take foil off crust and bake another 20 - 25 minutes, until crust is brown and knife pulls clean from filling
I personally enjoy serving this with vanilla ice or cinnamon ice cream and praline sauce. Its also great with a dollop of Cool Whip, for that "old school" vibe.
Everyone of my friends and family can't get enough of this stuff. Much lighter than pumpkin pie, and different flavor too.
