Homemade salsa and margaritas, or good beer. Sausage stuffed jalapenos, guacamole...........finger foods mostly.
Here are a couple of yummy easy recipes, I mean it, they don't sound like much but they are gooooood.
One is a baguette sliced into rounds, then make a spread of mayo, parmesan and chopped green onions. Bake them until they bubble, but get no more color than light golden.
Brown some bulk breakfast sausage (I use the less fat type) Jimmy Dean. Add a bit of very finely chopped onion, and black pepper. Once that is cooked through and tender, mix it with some cream cheese and parmesan. Put that mix in the fresh Jalapenos that you have sliced in half longway. Bake. they are soooo good. The first time I made them I scraped the seeds out of the chiles, and they weren't got enough. The last time I made them I added a chopped serrano, and left the seeds in. OMG mouth on fire.
It's Greek Lasagna & Landshark beer at Skeeter's house. (lasagna w/ beef, lamb, eggplant, feta, ricotta, mozzerella, black olives)
Well I cooked 20 pounds of wings up thisafternoon, tomorrow I'll put the sauce on them, honey garlic on one batch, barbecue sauce on another and the bulk of the wings will get Louisiana Hot Sauce. Tomorrow morning I'll make my chicken chili with mole sauce, and let it slow cook all day.
I'm also making a 7 layer dip, with corn chips, and a huge macaroni salad; my brother is cooking up some good ol' ribs, he's making a broccoli salad, and some bacon wrapped water chestnuts.....yum
We have lots and lots of beer, and a couple bottles if vino...some scotch...we're good to go!!

It's not health food but it's ok for the Superbowl.
Velveeta Cheesy Chili Dip
1 LB (16 oz) Velveeta cheese spread, cut into cubs
1 can (15 oz) chili with or without beans
Tortilla chips or French bread chunks
Microwave cheese and chili in a 2 quart microwaveable bowl on high 5 minutes or until cheese is melted, stirring every 3 minutes.
Makes 3 cups.
I'm making ribs tomorrow. Not watching the superbowl. No interest in it.

I just do it like this..... Cut an eggplant longwise in slices. (or, you can do the round way if you want). Dip each piece in egg wash & coat with breadcrumbs. Put on a cookie sheet & spray with Pam vegatable oil. Place slices in a 350-400' oven for 15-25 minutes (until golden brown). Prepare lasagna noodles as you would normally. I've used both the "no-boil" and the old fashioned boil, and it always turns out great. Cook 1/2 pound ground beef & 1/2 pound ground lamb in a skillet. Drain the fat as much as you can. (i even go as far as draining on a paper towel). Add a tall jar of your favorite Speghetti sauce & a can of diced/minced black olives. In a lasagna dish, put 1/2 cup of the meat sauce, layer 3 or four noodles on top, 1/3 of the big jar of Ricotta cheese, 1/3 of the meat sauce, 1/3 of the eggplant, 1/4 of a small block of feta cheese (crumbled), and 1/4 of a small block of mozzerella cheese (shredded). Repeat layers, ending with noodles, followed by sauce, followed by mozzerella cheese. Bake it according to the noodle's directions. *****OR******* If you have a crock pot - make the lasagna in it. Use the "no-boil" noodles. Prepare as you did above. Cook on low for 4 hours.
If you have people who hate eggplant in your house....2 rules NEVER put an eggplant in a fridge. It makes it bitter. Second, cut off the purple skin if your folks don't like it. Chances are, it's the skin that they taste as bitter. Skeeter
