Why was Jesus resurrected on the third day? Was there some significance? I was told the Jews did not believe one was really dead until the third day. Has anyone heard a teaching related to this?

1 Corinthians 15:4: "he was raised on the third day in accordance with the scriptures."

The parallel with Jonah points to a longer period of three days and three nights (Matthew 12:40; cf. Mark 8:31 etc.).

The most obvious if not only "scripture" left, afaik, is Hosea 6:1ff:

Come, let us return to the LORD;
for it is he who has torn, and he will heal us;
he has struck down, and he will bind us up.
After two days he will revive us;
on the third day he will raise us up,
that we may live before him.
Let us know, let us press on to know the LORD;
his appearing is as sure as the dawn;
he will come to us like the showers,
like the spring rains that water the earth.

It is rarely mentioned because in the context of Hosea this beautiful poem reflects a condemned naturalistic, Baal-like view of Yhwh whose "resurrection" corresponds with the yearly return of rain after the dry season...

This is a good question. The simple fulfillment of prophecy still does not answer this question of why three days? One explanation no one has considered yet is the fact that three days spanned the amount of time it would take to bridge the two Sabbath days that took place while Jesus was dead. Normally there is only one Sabbath day after the seven day Passover ends but during this particular year there were two in succession. Friday and Saturday. This made a high or great Sabbath that year which would require three days to clear. And the new grain used for the wave harvest during those Sabbath days made it special indeed. The Jews should have really been on the alert for a configuration like that.

Further, was Jesus dead three days, i.e. 72 hours, or merely parts of three days, i.e. died on Friday, raised on Sunday (or, died on Thursday raised on Saturday)? For that matter, was Jesus raised at all? Only a handful of people were supposed to have seen him raised up, and the only accounts which make the claim were written decades after the supposed events. This should have been BIG NEWS, so why no writings from 33, and why did he not appear to more people who witnessed the crucifixion, etc, so there would be an indisputable public record?
As it is, there are MANY more people who claim to have ridden in flying saucers than there ever were people who claimed to see Jesus raised up.
