ninja....a sandwich topic? wow, how strange. You can make light of way more serious subjects....I guess we all have our triggers. I have my own teeth problems, not to mention childhood issues.... I understand.

For you you my friend.....no more sandwiches with margarine and sugar!!! I would bring you a home made sandwich right now if you didn't live across the flipping pond!!

I love tomatoes slices on my sandwich and I LOVE mayo on everything! Can't have tomatoes since the salmonella scare. You have to have a garden or get them from a friend's garden.

I love the breads that aren't to seedy. I don't want to crunch on a seed! I hate pickles, onions, and mustard on my sandwich. The only sour sandwich that I love is a Reuben! And I love grilled cheese sandwiches! Oh! And avocado sandwiches and fried green tomato sandwiches....and eggplant parmesan sandwich...

I like to make open faced sandwichs, grilled in the oven.

Take some left over chicken breast which has been marinated in basil pesto.

Some artisan bread, sliced thinly, layer the basil pesto chicken, some really good mustard, (I love some of the european tubed mustards), then sliced thinly tomatoes, sea salt, a bit of pepper.

Then add on grilled mushrooms and shallots, some fresh cilantro and shredded cheese, I prefer a mix of havarti, provolone, parma and feta. (I like it tangy!)

Grill for about 5 mins or until bubbly golden and voila, Yummy!

the classic is of course a BLT. I make a really good BLT. It takes good sourdough bread with flavor, well toasted. Mayo with a little pesto sauce added. Fry the bacon slowly until really crisp, and then drain. Curly leaf or romaine lettuce, washed and dried. And the important thing - tomatoes as big across as the slice of bread. Slice tomatoes thinly and allow to drain on a kitchen towel until everything else is ready. Then just put it all together and have the most sublime sandwich! It's a summer time ritual.

The wife and I used to do a lot of canoeing. (Gotta start again soon). We would make each a sandwich of ham and cheeze on rye, with mayo and a little mustard. (Yummy). I always brought along an extra sandwich in case we were starving after paddling for two plus hours.

Now everytime we have a ham and cheeze on rye, it feels like we are out canoeing again.

I also love to warm up some chicken breast slices and with cheeze, and any kind of bread, as long as the chicken is still warm.
