Yet another comment -- the yellow corn meal "mush" at our house (now referred to as Polenta) was "mamaliga" -- my Romanian Grandfathers' staple. He would slice it and fry it in butter. Good for any time of day, depending on what you would put on top, sweet syrup for breakfast, cheese, meat, etc. etc. for other meals.

All this raving about Cornbread Casserole got to me. Even though I've been watching my intake and losing weight slowly, I had to make this tonight.
OH MY GOODNESS! It is delicious. I just pushed myself from the table after eating two grilled pork chops and two helping of the casserole.You're welcome
