Here in Canada, we have something called "poutine". It's fries with melted cheese and gravy, and it's really good. Well, it's really good if it's made with good cheese and good gravy. The fast food joints here try to pull off poutine, and it tastes like crap. If you get it in a real restaurant, it's fantastic.
I assume you are ALL talking about Corn Chips? NOT potato chips as we know them in UK
I packet of chips on roasting pan covered with almost anything and then cheese is superb,
with heat resistant plates you can do individual ones for each person, it looks neater.

Get yourself a nice baguette. Slice the middle to open it out like a sandwich, put Garlic chicken, or beef and onion, or Chicken tikka or Bacon, Lettuce and Tomato in there. Then some chips on the side, melt cheese over the lot...or even put chips on your baguette and melt cheese on that, tis nice also.
I think "chips" are french fries in England.
Potato chips in USA are thin, crispy, and crunch a lot when you chew them.
Or are you talking about tortilla chips? Guacamole is the best!
French fries with gravy or cheese and chili are divine!
Probably tortilla chips, like Tostitos or Doritos, fokyc.
Shredded beef or chicken.
Jalapenos are actually the hottest at the white part holding the seeds in. Try banana peppers for a little bite, not fiery.
Black beans and corn.
Rotel is good too.
Sour cream? Chips, cheese and sour cream. MMMmmmmmm......
I like Lay's cheese and sourcream potato chips.

Diced red and green peppers/cooked ground beef/diced onions/....and..2dips:..#1:salsa..#2:sour creme........................."How do I make Jalapenos not hot?".....Use less..And..The sour creme will reduce the heat if your using as a dip............................OUTLAW
