I am going to a St Patty's bbq (but of course).
I just received a ton of lemons and would like to make a dish with them to take. Any Irish-themed lemon-based recipes you can think of?
Right now I think I will do some sangria. I ahve a sangria cookbook, actually. But if there are some better rercipes out there I would change my mind.

I have seen some recipes for Lemon Irish whiskey cake but unfortunately you have to soak the lemons in whiskey overnight...
I could just inject the lemons WITH whiskey... you know, how they do with oranges and vodka?

I always liked lemon poppie seed cake. You could pour some booze on it, just before eating.

If you don't find something for St. Patrick's Day maybe you could make some Lemoncello (Italian lemon liquor served ice cold after a meal, helps settle the stomach). It won't be ready for a few months but homemade is excellent! Sorry, don't have time to dig up recipe for you, just Google it.
