Lately I've had a craving for chicken burgers, pork souvlaki on pita and a stir-fry with a peanut satay sauce. Not all at the same time.
They burgers are easy because I cheat and buy the frozen ones.
I cheat with the souvlaki too because I buy the marinated pork.
The stir fry is the most time intensive because of all the preparation - chopped red and green peppers, onions, mushrooms, lots of garlic, diced chicken sauteed in a peanut oil. Make or buy a Peanut Satay sauce (I like the bought one better than the recipe I have isn't as good) When the veggies are semi cooked I pour the sauce over. And I serve it over a hot plate of cappelli/angel hair pasta. I always make extra because it is even better the next day when the sauce coats everything.
But by far in corn season I could eat that every day - corn corn and more corn fresh from the farm. Gotta go buy some more
