What "lightweight" but delicious foods do you enjoy?

    I'm sure that the Andersons and Pentons liked the fish dish VERY much, Leolaia. I think that even I, who can't follow recipes so well, can execute this one!

    I'd totally forgotten about tofu, Robdar. And all those additions to a salad are tasty indeed!

    I like couscous with lemon and coriander - mixed with anything I can lay my hands on - finely chopped salad and/or a tin of tuna as a cold dish. You could mix it with vegetables too for a hot dish.

    Filling but not too heavyweight and a nice change from my usual pasta!

    Thanks Coco! Yes, pressure cooking is a time saver. I cook with propane, so it is convenient for me. I imagine my recipe would also do nicely in a slow cooker like a crock pot. I just had some of my soup with some warm, fresh bread. Yummy!

    I also enjoy making home made pizza. I make my own dough, which is really quite simple. I use prepared spaghetti sauce. I avoid brands that contain high fructose corn syrup. Always read the label! I top my pizza with finely sliced vegetables like onion, olives, peppers, and tomatos. I have used fake ground "beef" (soy based) sometimes. I would like to try some non-dairy vegan "cheese" too, but I haven't found any at the local supermarkets yet. One of these days I may start up some sour dough and try that too.

    Dear Emo and Dave:

    I was first introduced to couscous by an elderly couple from the middle east, Emo. Loved it. Gonna check my cupboard for that box someone tossed my way.

    That pizza sounds great, Dave. I've heard about the need to be wary of that sugary syrup that seems to be in everything. Thanks for the warning. My broth's a boiling now with lentil/bean mix, then potatoes and carrots in an hour, then onions and garlic when I've turned off the heat and let it cool a while. Hate to destroy those enzymes with too high a heat.

    I don't have any trouble finding soups or casseroles in the winter, I rely on many ethnic dishes for low fat low cal eating.

    Salads, grilled vegatables or plates full of fresh corn, tomatoes, cantalope in the summer.

    Getting the whole grains in me with out added calories was a chore. I like my bread & butter, can only eat just so much oatmeal.

    I started eating brown rice cakes this winter, can't say they are tasty at first, more like styrofoam, definately light. But I'm feeling so much better having reduced my wheat to occasional pasta or small serving of dessert. I am now addicted to Quakers White Cheddar rice cakes. I was never a snacker , my problem was too large a serving size, snacking on the rice cakes , I now am not so hungry and over eating at meals.
