We have come to an accomodation. I keep my roquefort and blue cheese in a ziplock bag and try not to leave it out any longer than necessary for my snack. She tolerates my Maries Blue Cheese salad dressing. Grilled blue cheese burgers are right out.
I like the stinky, my wife doesn't.

I put a little bit of blue cheese in when I make homemade mac & cheese. It gives it a nice tangy flavor.
And there's nothing better than a medium rare steak with blue cheese sauce on it.
The key to blue cheese is : moderation.

Keep it wrapped, and use good judgement. Nice that you respect your wife because this could be a real issue for some folks.
Reminds me of the idiots at work who heat up their lunch of Stink Fish (Mullet or other bait-fish) with extra stink-sauce. I bring a can of Lysol and hose down the break room whenever these idiots are loose.
