    Hey beks,

    My kids like some with sugar and cinnamon and some plain and puffy so the can put their beans in them Of course they like them made fresh. So I have to make up the masa and roll them out like a huge tortilla put them up into shapes and deep fry them to just the right puffiness LOL..is that a word? Like I said it's a once in a while thing. Too much work!

    Fresh coho salmon filet caught from the river right in front of us by my friend, Roy. I made a marinade of soy sauce, brown sugar, crushed garlic, salt, pepper and lemon juice. After 2 hours I grilled it. Made fresh steamed rice. Sauteed sliced zucchini squash, mushrooms, sweet onions and sundried tomatoes. Nice change from two days of turkey and trimmings left overs.

    A quickie meal: Near East Sesame Ginger rice with two fistfuls of fresh shrimp chucked in at the end. Yeah, I know, lame!

    Didn't actually eat any because we just buried our cat yesterday and I'm still crying my eyes out so hard they look like this: + +

    Took the ham bone Mr. B's SIL graciously gave us from Thanksgiving and made a humongous pot of split-pea stew fortified with carrots, celery, onions, garlic, thyme, rosemary and of course smoked ham... was just joking that he'll have to have it morning-noon-and-nite 'til it's all gone. (Actuallly, it freezes well so we'll have it on hand for other quickie meals at least thru Xmas.)

    Slicing, dicing and cleaning-up took my mind off and made me feel a tad bit better. I tend to throw myself into cooking whenever I'm sad, it's so therapeutic and uplifting to be creative and feed others when you, yourself, are down.

    If our Tuxedo-garbed Brooklyn Boy was still here, he would've been doing figure eights around my feet for the shrimp, then later on for the smoked ham. He loved to just sit by and watch me cook, because he always got some of whatever we were having.

    And it would have been PURE JOY to share with him again.

    We planted him under a new plum tree directly out the kitchen window, so he's always with me when I'm cookin' and lookin'.

    We've marinated some lamb for today - actually my husband has marinated some lamb for today. Yesterday he cooked salmon - and it was delicious.

    quietlyleaving, I'm so new to having lamb, but I always enjoy it in restaurants. How do you marinate it?

    Rather, what do you marinate it IN?

    The one and only time I tried it at home, I rubbed it with garlic and rosemary and broiled it. It was just "okay" but nothing to repeat.

    betterdaze, he used several different fresh herbs (he did the shopping this week, so the meal was restaurant standard - I tend to be more penny pinching).

    The marinade consisted of fresh thyme, basil, rosemary (we grow our own rosemary), dried oregano and then also garlic plus garlic infused olive oil. He made delicious cous cous to go with it (cous cous a first try and it was perfect) and lemon wedges, plus a medley of peas and leeks that we had in the freezer.
