I'm toying with the idea of going vegetarian for a month, just to see what it feels like. My concerns are

- nutrition
- flavor
My question is thus, is there a vegetarian diet that will meet these criteria? If so, what is it?

Your staples will be beans, rice and noodles. (not sure if you are worried about noodles coming from eggs)
JD, are you going pure vegetarian (vegan)? Or are you going to eat fish, fowl, eggs, cheese?
and brussel sprouts- lots of brussel sprouts.
I think going vegan would be a bit much to begin with. Try a good cookbook like one of the Moosewood cookbooks or Laurel's Kitchen.
Fish and fowl are not vegetables! That's just cutting out red meat. That would be pescatarian or... fowlatarian!

Oh, I wouldn't cut out eggs and cheese, I don't think. I just have no experience with vegetarianism, and I want to experience it. What got me started thinking about it was that story a couple weeks ago about the 104 year old strongman who got ran over by a minivan and was a lifelong vegetarian.
Lenny and I don't eat a lot of meat. He introduced me to a health salad that we eat almost every day and never get tired of. Nutritious and delicious. I am trying to lose weight and I am eating this salad one to two times a day and a lot of fruit as well.
Basically the vegies are shredded. This is what it has in it: cabbage, sweet onion, fuji apple, yellow squash, zuccini, carrot and beet. It is delicious with any dressing but I make my own, the recipe can be found on the back of Bragg's apple cider vinegar, and probably on the net. I thought I hated squash, zuccini and beets until I tried this salad. It lasts 3 days and costs about 4-5 bucks a batch.
I believe going complete vegetarian would be hard on your system if you change your diet too quickly.
I am a semi-vegatarian--I eat fish, fowl, eggs and cheese. There are lots of good recipes that you can make at home. It's when you start buying pre-prepared dishes that it starts getting expensive.
I am about to leave work to pick up a guest who will be staying the weekend with me and so I do not have time to share my recipes. I will try to email you a couple next week.
although you have given me a huge portion of shit over my diet, I'll try not to laugh at you.
