Here in Central Mississippi (the Deep South), we're preparing for 4 to 6 inches of snow. It's been many years since we've had that much snow.

Hehe Slooon!
Parakeet! Sorry, I didn't see your request for a recipe. I made it up, so it's not going to be very precise, but Ohhhhh man it was good! I'm roasting a whole chicken today to make some more.
I roasted some chicken thighs, roasting to bring out the flavor. Then I simmered them for a while making stock with leek, onion, garlic and some jalapeno and a poblano I had in there, then strained it. Chilled the stock, so I could skim the fat off. So now we have awesome stock with lots of tender chicken in it. I sliced a carrot and some celery and another onion (I'm sure I must have sauteed the onion first) and cooked that in the stock with a whole can of Las Palmas green enchilada sauce (IMHO that is the best brand). Threw in a can of hominy, and served each bowl with a little shredded pepper jack cheese, and some chopped green onion cilantro avocado jalapeno and crispy tortilla strips. I think the next day, I also threw a dollop of sour cream on top.

It's snowing pretty hard in Dallas. The snow is falling inside of the parking garage I'm parked in and turning to ice. I just hope I'm able to drive outside of the garage safely when I get off work. A few minutes ago a car was trying to drive up in the garage and started sliding down.
