I love a lot of the food too (crawfish, barbecue, greens, okra, etc, etc) but it's just the Yankee side of me that talks sometime ... lol.

Potato Salad made with potatoes, miracle whip, hard boiled eggs, sweet relish (sometimes I put dill relish in mine) , mustard, pimentos, a touch of milk, and a little bit of salt, and sugar with paprika sprinkled on top.
