"The Canon of the New Testament", by Bruce Metzger.
"Lost Christianities", "Lost Scriptures", "Misquoting Jesus", "Jesus interrupted" and "The Orthodox Corruption of Scriptures", by Bart Ehrman.
Leavingwt just suggested "Jesus Wars: How Four Patriarchs, Three Queens, and Two Emperors Decided What Christians Would Believe for the Next 1,500 years", by John Phillip Jenkins. You can order them all from Amazon.
I believe that a study of who wrote the Bible and why is incomplete if you don't also get to learn who they are supposed to be talking about. "Jesus, apocalyptic prophet of the new millennium", by Bart Ehrman again, is a good read, though I have just had a few looks at it.
I like John Dominic Crossan's Jesus a Revolutionary Biography; it is focused on Jesus obviously but it is amazing.
