Talesin, I have made many a hearty meal with a base of mac and cheese (not name brand though). Toss a bag of frozen veggies in with the macaroni in the last few minutes, drain, add the sauce, milk and margarine with a can of tuna, or some cooked ground beef or ground turkey. That's good eatin'!!

Ressurecting this thread, because we didn't get a lot of good recipes.
One of my all-time, easy easy recipes....
Meatloaf (and believe me, this is NOT DRY)
feel free to double, triple or whatever ....
1 lb. hamburg
1 egg
1 t garlic powder (or to taste, or if fresh,,, 2 cloves, minced)
2 slices of dried bread (optional, just adds bulk)
1 small onion, diced
2 T milk
(t = teaspoon, T = tablespoon)
put all in a bowl, mix (and get busy with it,,,, mix with your hands~!)
After mixing, press into a baking dish (depending on the quantity,,, but make it no more than 1 1/2" deep)
cook at 325degF till pink in the middle ---- this is special instruction for IAMSO COOL, because you will be reheating --- that way, it's not overcooked when you nuke it later!
okay, another good one is scalloped potatoes .. this takes a little time, but a big batch will last you a while ....
peel and slice potatoes very thin (the amount is up to you, depending on how much you want to make)
grate or mince an onion
grease a baking pan with olive oil or butter.
make a layer of potatoes ..... dot with butter, sprinkle a little salt and pepper, and sprinkle a bit of onion.
another layer of potatoes, and repeat until you are an inch from the top of the pan.
now, pour milk (or canned milk, diluted 3:1) over the potatoes until covered.
Cover pan with foil, and bake at 325degF until you can break the potatoes up easily with a fork.

Okay, do you like corn chowder?
1 can creamed corn
1 medium potato
1 small onion
pinch of 'curry spice)
salt and pepper to taste
(also, feel free to double triple etc)
Chop onion fine, and cube potato (think, potato salad size)
Place in pot, cover with water, and boil until potatoes are cooked.
add creamed corn, pinch of curry sauce, and milk (or canned milk 3:1) to make the right consistency.
mmmmmm,,,, good! My friends say "what is the secret ingredient that makes it so good? the curry!)

Okay, one more.....
The cookbooks call it "new england boiled dinner", but I call it "corned beef and cabbage"
This is a little more complex, but will give you many meals, and is VERY HEALTHY!
Purchase a 'corned beef brisket' ,,, or if it's available in your area "American Plate corned beef"
1 head cabbage
potatoes
1 onion
carrots (maybe 5 or 6)
Put the brisket in cold water (don't just cover it, put in extra water), bring to a boil, turn down element so that the meat is on a 'rolling boil'. In the first 10-20 minutes, scoop off the 'scum' that rises to the top (this is merely extra fat and salt).
Cook for 2 hours.
Add sliced cabbage, potatoes and carrots. Keep on slow boil till cooked.
This provides at least 3-5 meals, and is sooooo good for ya!
