I'm finding that a good "in-between" camera is the Canon Rebel T2i.
The hunny bunny gave me one for X-mas last year.
It's a good point and shoot when you need, and a good camera to learn more advanced photography on, when you have the time to shoot.
Here's a couple of mine from Les Iles de la Madeleine this summer.

I bought a Nikon D3100 last year for about 900-1000$ and I love it. It has 2 lenses and a case as a package. Next semester at school I'm taking a into to digital photography class and I wanted to have a nice into level camera for it. It takes video in 1080p also. I'm not really an artist, but I've been told I have raw talent. I hope the class I will take next semester I will have a little know how to go with any talent I may have.

Tal, I would love to visit you! Les Iles were my first visit to the Maritimes and I loved it!
I passed my Rebel to the boat guy for this pic from Jamaica and it's great!
It shows how easy the "point and shoot" aspect of it is.
I have this blown up to 8x10 size (because it was one of the best days of my life ) and the resolution is still great.
