I make my own BBQ spice and sauce. It's not traditional around these parts, but I chose a LONG time ago to listen to the Tex-perts. :D
Would love to do a buried BBQ!!! But that's not gonna happen. :(

First time I ever went to Texas my cousin took me to this roadside hole in the wall BBQ joint. Omg, who needs sauce? I'll eat Texas BBQ anytime.

Some of the best BBQ ever can be found in small out of the way roadside holes you described. Those people are doing it because they CARE about their craft.
Unlike these big commercial multistate chain operations. In Texas, stay away from big chains like Pappa's BBQ and Rudy's. That boiled cheap meat they slather with sauce is not real Texas BBQ.
