I am doing some research in university on non-belief of evolution amongst scientists. If you want to show her some interesting facts, have a look at the 2009 poll by Pew Research group.
It is a very comprehensive study on what people believe and why. They found that lack of education and church attendance correlated with not believing in evolution.
Probably the most interesting statistic for me was that most people that deny evolution also believe scientists have no consensus on evolution. The reality is that 97% of scientists DO agree that evolution took place. The stats are all in this paper. Print off this study for your mum and ask her for proof that the majority of scientists deny evolution.. Ask her for a paper, poll etc, any evidence at all. Here is the paper (worth reading guys)

The National academy of sciences have a great booklet explaining the best ideas we have and the evidence they are based on. The booklet also explains that the majority of scientists accept evolution...... but....debate it's mechanisms in specific specialities. They say that religious people often quote these debates and represent them as scientists debating evolution itself. The booklet is a great and informative piece of work, print it off for your mum too!
