With a knife. Simple and less clutter.

If you're looking to do a large amount of apples (such as when you make lots of cakes) you could buy a corer/dicer or one of those "Nicer Dicer" products (they come in a variety of names and forms).

Do you mean dice or peel? Any food processor will dice, even those little choppers. The big mess is peeling them. Every so often they market a device for fruits and vegetables. You stick the apple or potato on a stick and the blade travels around the vegetable/fruit. It makes no sense investing the money unless you are going to make large amounts of apple pie or something. I hate products that have only one purpose. Hey, running the device was fun. I have a feeling it took just as much time as hand peeling.
I use a larger blade on hard to cut items. You get more leverage. Some items are very hard to cut. You could also considering baking the items with cinammon or nutmeg. After they are baked, the skin slides off easily. Of course, your apples are mush, though. I make baked apples with cinammom, nutmeg, and some ginger. Add some pecans or walnuts. Next, I make a topping with a combo of whipping cream and cream chesse or sour cream.
Very delicious.

If you buy one from TV, you can get a second one just by paying extra processing and handling.
