Do you have coconut oil recipes that does not involve knives?

Keep it in a warm place, it is liquid above 76F
Substitute it in baking. Bread made with coconut oil is nice.
She could just eat it by the spoonful. If it's distasteful, it's bad oil, so find a new supplier, or extract it yourself. (Don't cut your hands on the grater )

Further to jwleaks, I have used coconut cream in coffee, just using it as a replacement for milk, and I rather like it.
Just don't fall out of the tree, or cut yourself on the grater. I have seen it in tins in our supermarket, but I do fresh.

My mom puts it on her toast instead of butter, sometimes in coffee, on a peanut butter & jelly, anywhere you can use butter you can use coconut oil.

This is the best brownie I have ever had. You could easily substitute regular flour for the sorghum flour if you don't care about the gluten. It's sort of a cross between a brownie and a flourless chocolate cake.
