The largest wooden ship built was the Wyoming in 1909. She lasted until the 1920's but was so leaky the pumps had to be used continuously. She went down with the loss of all hands.
Floating in a lake or a creek is one thing, on the open sea it is all rather different.

EOM, that's intellectually dishonest, posting a pix and saying it's stable, but forgetting to mention this ark replica was built in Netherlands and rests on a platform built of modern metal barges.... The wooden construction in the pix is decorative touches added to dress it up.
