Your points about previous flu viruses are well taken. I remember more than one episode where it seemed like (read hyper-media said) the potential for a massive uncontrollable outbreak was on the horizon, and then...it all just faded away, with nothing more than the "average" number of deaths.
However, I do wonder: how was the Spanish Flu "perceived" at its onset? Or, the Black Plague?
Not all such infections can be dismissed out-of-hand as run-of-the-mill annual disease cycles.
