Many US farmers use Glysophate to prep grains so they are ready for harvesting machines early and uniformly. The producers claim it kills the good gut flora making it less digestible and triggering allergies. Eating active cultures pro-biotics helps but does not fully offset the damage. It is claimed in areas that don't use this harvesting technique, Gluten sensitivity is much rarer.
