recipe for Oven-Fried Chicken Livers:
2-3 pounds of chicken livers, cleaned and split into bite sized pieces;
flour for dredging(about 2 cups) in a pie tin or shallow bowl;
2 cans of whole(unsweetened) evaporated milk--it MUST be whole milk- skim will not work!-in a shallow bowl;
2-3 cups coarsely crushed corn flakes-in a shallow bowl;
Seasoned Salt, black pepper, Louisianna Hot Sauce;
in assembly line fashion dredge livers first in flour, then totally coat in evaporated milk, then roll generously in corn flake crumbs, place livers on greased cookie sheet close together. Sprinkle with Seasoned Salt and black pepper and place in 400 degree over for about 20-25 minutes or until crisp and golden brown. Serve with hot sauce.
