Just finishing off the last of the Quail and manna.
Manna is good with just about anything...I think I could eat it for forty years.

Tonight I cooked lamb shanks, new potatoes, carrots, brocolli and cauliflower.
We also enjoyed a bottle of Pino Grigiot.

Maxwell, try broiling your fillet! Lay it out skin side down on a tray of tin foil supported by the broiler pan. This way the pan stays clean and you throw away the foil after dinner. Sprinkle Montreal Seasoning (chicken or beef ) on the fillet and put in hot oven. Depending upon the thickness of the fillet, you should have a fine dinner in twenty minutes or so. Simple, but super! You may add lemon juice or tarter sauce, but if it's a good fish (wild not farmed) and it isn't over cooked, you won't need anything in the way of a sauce.

Thanks for that tip. I had already cooked it when I saw your post. I tried making a pouch with aluminum foil and poured a little cooking wine in on the fish, onions, bell pepper and seafood seasoning and put it in the oven for about 30 minutes at 325. It's tastes fine to me, although it could probably be better. I'm just waiting on the rice to finish now. I'll try it that way next time. That definitely sounds easier. I've always steamed salmon before.
