    Roast Armadillo

    1/2 cup sweet & sour sauce ...

    3 tbsp hoisin sauce

    1 tbsp sesame seeds

    Dan-o the only thing that sounds good about that recipe is the sauce

    actually, the sauce is pretty damn good. Haven't tried it on armadillo, but it's great on chicken & pork

    oh Dan o you make even an armadillo sound edible

    FHN, armadillo actually is pretty good

    not as good as gopher turtle, but still good ..

    armadillos look like armored oppossums

    A friend related this Road Kill episode:

    While commuting between Las Cruces, New Mexico and the White Sands Missile Range, he passes a "flat rabbit" on the road. The "flat rabbit" is being attended to by a rather large hawk. The hawk obviously has only one thought on his mind: "ahhh, Rabbit Pancake, my favorite"!!! The hawk is totally oblivious to the rush hour traffic whizzing past at the posted speed limit and higher.

    Returning that evening, my friend noted a "flat rabbit" and a "flat hawk". There were too many cowboys with monster mudgrips passing to let that piece of roadwork last.

    It was noted that the hawk was not wearing a safety vest or hard hat and had not deployed any barricades, signs or safety cones.

    Wow ... violated one of the cardinal rules, didn't I? "Never leave behind any written pr photographic evidence." So, now that I've been "outed" ... here's the official recipe. The sauce works great on spare ribs, too.

    Sesame-Ginger Barbecued Chicken

    Ingredients

    ? 1/3 cup plum sauce or sweet-sour sauce

    ? 1/4 cup water

    ? 3 tablespoons hoisin sauce

    ? 1 1/2 teaspoons sesame seed (toasted, if desired)

    ? 1 clove garlic, minced

    ? 1 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger

    ? 1/4 to 1/2 teaspoon Oriental chili sauce or several dashes bottled hot pepper sauce

    ? 6 small skinless, boneless chicken breast halves and/or thighs (about 1 1/2 pounds total)

    Directions

    1. For sauce, in a small saucepan combine all of the ingredients except the chicken. Bring to boiling over medium heat, stirring frequently; reduce heat. Simmer, covered, for 3 minutes. Set aside.

    2. Rinse chicken; pat dry. Grill chicken on the lightly greased rack of an uncovered grill directly over medium heat for 12 to 15 minutes or until tender and no longer pink, turning once and brushing with sauce once or twice during the last 5 minutes of grilling.

    3. In a small saucepan heat the remaining sauce until bubbly; pass with chicken. Makes 6 servings.
