After years of charcoaling, we got a gas grill. We use some special briquettes to get the charcoal taste.

I think the briquettes make a difference. I prefer just a wood fire (no mesquite) when we go camping.
talesin, just make sure you step back when you toss it on and you don't have a fume trail back to you or it will be barbequed talesin.

It's really nice if you have driftwood. The flames can have some really pretty colours, specially if there is any brass cladding in the wood ------ blue flames from the copper in the brass.
Awwwwwww, now I'm hungry for a nice, juicy steak, and wanting a bonfire! Time for a trip to the country.
