I was taught that it was just a hyperbolic way of saying avoid sin at all costs, and avoid promixate occasions of sin. I still agree with that interpretation.
to stop/avoid/change actions/friends/customs that probably could lead you to sin.
i.e.: if watching pornos make you think of sex, don't watch them. ;-)
I think it goes a little deeper than that. Plucking an eye out is very extreme. To me it means more than just stopping a certain action or behavior. It means denying your own being
...or perhaps marrying too young in life with someone you are not prepared to commit to ---just to avoid committing the great FORNICATION sin.....oh no, anything but fornication....

This means that we must avoid practicing sins that will cost us everlasting life. Certain sins can become practices that are extremely difficult to stop. These might be things like drunkenness, drugs, fornication, lying, stealing, slandering, etc. No matter how difficult it might be to break clean from these things it is worth it because it means our everlasting life.

Actually the lesson in that teaching is one of "cause and effect". Jesus wasn't saying "if you do ______ you'll die", he was saying that we need to recognize that _______ started with some physical trigger (sight, smell, touch etc.), being the sentient creatures we are. So if we keep our senses in check hopefully it won't lead to ______! And for those who will inevitably say, " well I just can't help "it"..." the counsel is do whatever it takes if you truly value your everlasting life. Remove the "cause" and you control the "effect". If you don't "start a fire", you won't have to put it out. It's the attitude of not doing whatever it is for us that leads up to ______, that is "death" dealing. The choice is ours.
Remember the Bible never says we have to get all of our imperfect tendencies licked (will never happen)- just be cognizent of them and be working on them as best we can.... it's a continual work in progress, that can't be fixed without eventual divine intervention. This shows what we want... not what we are.
Modern psychology agrees... example if a man is struggling with alcoholism and yet continues to hang out with his drinking buddies in a bar yet complains that he "can't" beat his alcoholism- he's fooling himself and belies that alcoholism isn't the only problem here. He claims he hates being an alcoholic, but his actions show otherwise. If he truly hates being an alcoholic and the consequences he's reaping from that destructive lifestyle, than he has to make a choice (unpleasant as it may be) and "pluck out his eye", as it were. Other wise quit your bitchin and order a round for all your mates!
