Its a broad subject but in the context of what I think you asked: It is a matter of scrambling data into a format that is unreadable with out a decryption key. Generally a security measure.
You wanna know more or is that sufficiant?

Encryption will scramble the data in your files so that no one can read the information unless they have the correct KEY to de-cript the files. Most operating systems these days have built in encryption. If you turn this on then you may not realize you are encrypting files until you try to open them as someone else.

In the "internet options" there is a box that I checked which says, "do not save encrypted pages to disk". I read this while searching for encryption.
Is this better checked or not.
