Actually, God said they would die the very day they ate from the tree:
Gen 2:17 - for in the day you eat from it you will positively die
Of course, we can say that they were 'disconnected from the source of life and so in that sense they began their descent into death on that very day', and continue to believe the account is factual. But that's where the problem comes in. If we allow ourselves to "explain" verses from the Bible, then our own preconceived ideas of interpretation MUST shine through those explanations. But the Bible can't be read any other way. Read literally, it makes no sense at all, it contradicts itself like mad. Only after we apply our own biased explanations are we able to make it seem in harmony.
The JW viewpoint is one that takes it "literally", and has explanations to make it all fit together.
There are many other Christian religions that do the same thing. They have different explanations, but it all fits together their way too.
So in the end, why bother? If the book God gave us is only understandable if "interpreted" and if the interpretations are contradictory yet in harmony internally, there's just no way to tell what God was trying to get across.
